Classic Derby Pie Recipe

Instructions: Prepare the Crust: In a medium bowl, combine the flour and salt.Add the cold, cubed butter and use a pastry cutter or fork to cut the butter into the flour mixture until it resembles coarse crumbs.

Prepare the Filling: In a large bowl, combine the granulated sugar, brown sugar, and flour.Add the eggs, melted butter, bourbon (if using), and vanilla extract. Mix until well combined.

Assemble the Pie: On a floured surface, roll out the chilled dough into a 12-inch circle. Fit it into a 9-inch pie dish and trim any excess dough, leaving about a 1-inch overhang. Fold the overhang under itself and crimp the edges to seal.

Bake the Pie: Place the pie in the preheated oven and bake for 50-60 minutes, or until the top is set and golden brown, and a knife inserted into the center comes out clean.

Cool Allow the pie to cool completely on a wire rack before serving. This helps the filling set and makes slicing easier.
